3 ingredient Samoa cookies

Hey there! If you’re a fan of the irresistible Samoa Girl Scout Cookies, now called Carmel deLites, I’ve got a healthier alternative for you.

TIP: If you like your cookies on the sweeter side add honey or maple syrup to your ingredient list.

Ingredients

  • 2 cups shredded unsweetened coconut

  • 2 medium ripe bananas

  • Chocolate chips for drizzling plus 1 tablespoon of coconut oil to melt it with

Directions

Start by mashing together the ripe bananas in a medium bowl. Mix in the shredded coconut until combined. Form mixture into donut holes and gently flatten onto a parchment-lined pan. Bake for 25-35 min at 350°F or until golden brown.

While the cookies cool you melt your chocolate and coconut oil together. Drizzle the chocolate over top and place in the freezer to set.
